*Note for the “Okinawan” & “Uala” Varieties of Sweetpotatoes*:
Very light or otherwise nutrient-deficient soils often produce a violet or white & lavender colored flesh in these varieties. They require rich soils to bring out their deep purple color though heavier soils are usually sufficient enough on their own. These varieties are heavily cultivated in the volcanic ash-rich soils of Hawaii. If your soil needs some boosting to mimic those ideal conditions for obtaining the dark purple colored flesh, iron can be added along with normal fertilization whether synthetic or organic based, and is usually enough to cause them to produce the darker flesh. The addition of Magnesium and Cobalt can further enhance the results as well. The “Specked Purple” and “Purple” varieties will turn dark purple in any soil and the Oriental Violet variety can be changed to a darker colored flesh if the soil is enriched. Oriental Violets do tend to keep the white flesh with the starburst pattern, but the purple starburst pattern can be caused to deepen in color.

Hints: You can extend your growing season by putting black plastic on the ground under the plants to warm the roots and/or making small tunnels out of wire or PVC pipes poked into the ground to form hoops. Cover with clear plastic and you have a mini, inexpensive greenhouse. Bury the edges, have a watering system inside such as drip tape and you'll never have to open it till harvest. Keeps the bugs out too!
